INGREDIENTS FOR 6 PERSONS
500 g of spelt
2 heads of radicchio
1 shallot
6 spoons of olive oil
6 spoons of aged Pecorino cheese
2 liters of vegetable soup
1 glass of red wine, salt and pepper

This event marks the beginning of spring and the renascence of earth: flowers and trees are blossoming again and animals emerge from their hibernation.
